I thought I would share this family recipe (goes back to the great grandparents) for Ginger biscuits.

300g flour
125g sugar
200g golden syrup
150g butter
1 teaspoon powdered ginger
1 teaspoon bicarbonate of soda
pinch of salt
(optional 100g finely chopped glace ginger)
Method: warm syrup and butter and pour onto dry ingredients. Stir well and allow to cool slightly. The mixture should be fairly stiff. Form into small balls about the size of a walnut - heaped teaspoon of mixture - place on a baking sheet (you'll need several) lined with baking paper and flatten the cookies slightly. Bake 15 minutes in a slow oven (that's round about 150 degrees C, but check your oven's recommendation). The trays should be as low in the oven as possible. Allow to cool on the tray then remove to a wire rack to cool properly. The cookies will be too pliable to remove straight away...... Enjoy.
These are good dunked in a cuppa, as they turn out very crisp when cooled completely.

I know two different bikkies that only have a handful of ingredients, and they're both really easy to remember.

Peanut Butter Biscuits:
1 cup peanut paste
1 cup sugar
1 egg

Mix + bake


Custard Cookies:
x Plain Flour
x Butter
1/2x icing sugar
1/2x custard powder

(ie equal amounts flour+ butter, half as much icing sugar and custard)

Rub together, bake at 160 for 10-12 minutes.
